AYURVEDA: THE ART OF LIVING
This class series has been specifically designed to help you understand
the main principles of Ayurveda at the same time you learn
specific preventive routines, personalized Ayurvedic diet, and
other techniques, which can be applied from the moment you
leave the class.
Beginning with a brief introduction to the origins of Ayurveda, the
seminar flows into some of Ayurveda’s most relevant concepts
such as the theory of the three doshas or constitution types,
the internal fire (Agni) and the toxic by-product known as
Ama. Then we move into preventive routines followed by a
thorough overview of Ayurvedic diet, including food properties
and their benefits and/or contraindications for each dosha. To
top it off, we will study stress from an Ayurvedic point of
view, analyzing its impact on the doshas, looking at ways of
reestablishing balance, and reviewing routines and techniques
to help restore physical health and peace of mind. No previous
Ayurveda knowledge needed.

AYURVEDIC COOKING: ON & BEYOND THE
STOVE
Contrary to most cooking courses, Ayurvedic cooking does not focus on
rich flavors, complex sauces and delectable desserts.
Ayurveda, as the art of living, mainly focuses on creating
simple and balanced diets that are healthy and nourishing and,
at times, even healing. Through a combination of theory and
practical classes we will explore personalized diets,
nutrition, the world of food, how to combine it properly, the
art of “antidoting”, the six tastes, the world of spices and
how to prepare simple, balanced
dishes according to each dosha. A very important course as diet is the
primary method by which Ayurveda helps us cure diseases and
keep the body healthy.

mandatory in order to attend practicums***.
The course consists of four theory classes as follows:

4th Part: The World of Spices

these two classes if you have already attended an Ayurveda

AYURVEDIC COOKING PRACTICUMS
Our practicums are not a bunch of recipes that you have to memorize but
a hands-on continuation to our Ayurvedic cooking theory
classes. We want you to learn the theory behind Ayurveda so
you can go home with a good understanding of how to prepare
easy, balanced meals using your favorite techniques
or cuisine style. We will prepare simple recipes using
“antidotes” for each dosha and explaining different variations
so you can easily accommodate each dish to the different
constitutions in your household. Each practicum includes lunch
and lasts for approximately three hours.
***Previous knowledge of Ayurvedic diet and nutrition or attendance to the
Ayurvedic Cooking On & Beyond the Stove Course is mandatory in
order to enroll in these classes.***
Bear in mind that this is NOT an Indian cooking class and that, even
though we will cook several Indian recipes, we will also
prepare worldwide recipes using Ayurvedic principles. Recipes
are all vegetarian but can be easily modified to include
